A delicately structured washed coffee with lasting sweetness and impressive clarity, this Java variety offers a high-elevation expression of Antigua terroir. Light and medium roasts highlight raw brown sugar, lemon peel, black tea, and crisp green apple. Light-bodied and vibrant, it finishes with refined floral accents, malted grain, and subtle spice. The Farmer Details
Sourced from a blend of historic farms in Antigua, Guatemala — including Cabrejo, Pavon, and Pulcal — this Java lot is grown by the Zelaya family, renowned producers with more than 15 years of specialty cultivation experience. These estates, some of which date back to the early colonial era, sit above the city of Antigua and benefit from the region’s unique microclimate and rich volcanic soils. The Java cultivar, with its long, narrow seed shape, thrives in this environment, producing coffees known for tea-like aromatics, refined acidity, and crisp sweetness.

Roast Levels & Flavor Profiles
Light Roast — Raw sugar sweetness, lemon peel, black tea, crisp body, green apple acidity.

Medium Roast — Cocoa, brown sugar, soft spice, gentle floral tea, mellow citrus.
