Sourced from a blend of historic farms in Antigua, Guatemala—including Cabrejo, Pavon, and Pulcal—this Java lot is grown by the Zelaya family, renowned producers with more than 15 years of specialty cultivation experience. These estates, some of which date back to the early colonial era, sit above the city of Antigua and benefit from the region’s unique microclimate and rich volcanic soils. The Java cultivar, with its long, narrow seed shape, thrives in this environment, producing coffees known for tea-like aromatics, refined acidity, and crisp sweetness.
